Vegan soup: corn, mushroom, peppers

March.  That was the last time I posted anything on this blog.  Oops!  Nobody ever said blogging was easy.  What's easy is to ignore it altogether, not take photos, or log ingredients and just eat my meals.  Sigh...

I actually have several photos of meals that I then never wrote about.  In an effort to do things that bring me joy, I'm going to try to remember to share these meals.  This was the other night (sometime in late July 2015).  And yes, it was delicious!

I believe the ingredients were
1 ear of corn, kernels shaved off
3 mushrooms
1 yellow pepper
1 c almond milk
1 Tbsp olive oil

Blend in blender

Garnish with

6 cherry tomatoes, halved
chopped chives, oregano
freshly ground black pepper
