Vegan soup: corn, mushroom, peppers

March.  That was the last time I posted anything on this blog.  Oops!  Nobody ever said blogging was easy.  What's easy is to ignore it altogether, not take photos, or log ingredients and just eat my meals.  Sigh...

I actually have several photos of meals that I then never wrote about.  In an effort to do things that bring me joy, I'm going to try to remember to share these meals.  This was the other night (sometime in late July 2015).  And yes, it was delicious!

I believe the ingredients were
1 ear of corn, kernels shaved off
3 mushrooms
1 yellow pepper
1 c almond milk
1 Tbsp olive oil

Blend in blender

Garnish with

6 cherry tomatoes, halved
chopped chives, oregano
freshly ground black pepper

Sautéed zucchini with onions, yellow peppers and mushrooms

This photo is from last year. I have a habit of taking the photo and starting the blog post, and never taking the next step - write the post! Sigh... So I'll start posting these old meals. Well, they were fresh, at the time! I hope you get inspired!

Carrot Smoothie

I'm still experimenting with getting the colors rights.  Green and orange end up an ugly color.  As usual, this tastes great, and is quite nutritious, but my goal is for my smoothies to also be pretty!

The usual suspects:

Almond/coconut milk, aloe juice, cactus water, local honey, wheatgrass, flax seed, chia seed, coconut oil, mint, parsley, avocado, ginger, turmeric, cauliflower, apple / tangerine / cucumber / carrot / orange / wedges.

Parsnips in a smoothie?

Breakfast: smoothie

This one turned out sweeter than most, because of the tilt towards more fruit than veggies.  And is a pretty bright green color : >

Here's the ingredient list:

Almond/coconut milk, aloe juice, cactus water, local honey, wheatgrass, flax seed, chia seed, coconut oil, mint leaves, ginger, turmeric, 1 parsnip, 1 cup kale, 1 yellow squash, 1 whole avocado, 3 tangerines, 2 small apples, 4" of a cucumber.

Lunch: Vegan Ethiopian meal

I went to a meeting on Saturday, which was right next to Azla, a vegan Ethiopian restaurant.  Since I had lunch before the meeting, I wasn't hungry, but the food smelled and looked so good that I asked for a taste.  And then I ordered a to-go box.  I ate the food today (Monday) for lunch.  The flavors were great, but I think the injera bread probably needs to be consumed same day.  It tasted weird today, so I didn't eat it.  Usually I can't get enough!!  But everything else was great!

Beet salad, kale salad with mango and walnuts, stewed potatoes, cabbage and carrots, tofu cooked in the style of Ethiopian beef dishes.  Delicious!

I also included a slice of my friend's almond cake and green tea!  YEESSSSS!!!

Monday morning smoothie: apple cucumber tangerine

Breakfast: smoothie

This one turned out sweeter than most, because of the tilt towards more fruit than veggies.  And is a pretty bright green color : >

Here's the ingredient list:

Almond/coconut milk, aloe juice, cactus water, local honey, wheatgrass, flax seed, chia seed, coconut oil, mint leaves, ginger, turmeric, 1 whole avocado, 3 tangerines, 1 small apple apple, 4" of a cucumber.

Zucchini Soup

As usual, I was just going on instincts while making this last night.  Tasted good!

2 cups almond/coconut milk (@LoveMySilk)
1 tsp olive oil
1 tbsp chopped onion
1/2 yellow bell pepper (1 Tbsp reserved and chopped for garnish)
3 cauliflower florets
4 mushrooms (1 reserved and sliced for garnish)
1 clove garlic
1/2" ginger
12 basil leaves
1 yellow carrot
1 1/2 zucchini
1/2 lemon
1/2" orange slice
1 avocado (1/4 reserved and chopped for garnish)
1 tsp red pepper flakes
Black pepper
4 olives
1 Tbsp Hummus (@lillyshummus)

Wash all vegetables.  Peel the onion and avocado.  Coarsely chop all vegetables so that they'll blend better.  Toss everything except the olives and hummus into the blender.  Garnish with olives, avocado, pepper, mushrooms, almonds and a dollop of hummus.

Red Spinach

This morning at the grocery store, I saw a bag of red spinach, and thought "Eureka!  A way to add spinach to my red smoothies!"  Alas, the color still ended up being that awful brown shade.  It still tasted great (and yes, I drank it...I don't believe in wasting food!), but I'll have to find another way to make sure my red breakfast smoothies aren't limited to sugar based fruits.  Balance!!  I want BAAAAALANCE!!

Basic Red Smoothie

Here's another smoothie recipe.  I don't like mixing red and green because the resulting brown is rather unappetizing...it still tastes great, but looks yucky! lol

Basic Red Smoothie (makes enough for two servings)

1 cup Almond/Coconut milk
1/4 cup aloe juice (whole leaf)
1/4 cup cactus water
1/2 red or yellow apple or pear
1/2 orange
5 red grapes
1 small beet
6-8 berries
1/2 carrot
1/2 avocado
1/4 lemon
1" slice cucumber
1 mint sprig
1/4" ginger
1/8" turmeric (VERY strong flavor, but super healthy, optional)
1 Tbsp chia seeds
1 Tbsp ground flaxseed
1/2 scoop wheatgrass
1 Tbsp coconut oil
1 Tsp local honey

Adjust liquid to your taste and texture preference.  Put everything in blender.  Blend.  Drink!  Yummy!

Kale, Squash and Onion Sauté

Tonight for dinner I had a Kale, Squash and Onion Sauté, apples with peanut butter, mango slices and a square of dark chocolate.  As you know, I'm a home cook, no training at all, so use this recipe as a guideline, not a strict dictate! lol

Kale, Squash and Onion Sauté
Serves 1, total time ~ 20 minutes

4 kale leaves, chopped
1/2 yellow squash, chopped
1/2 rutabaga, chopped
1/2" thick slice of yellow onion (cut off whole onion), chopped
1 garlic clove, minced
1 Tbsp coconut oil
1/2 Tbsp butter (optional, leave out for vegan)
pinch red pepper flakes
Fresh ground black pepper
1 cup cooked brown rice

Heat coconut oil in skillet, over medium low heat.  Add onion and garlic and cook until soft, about 2 minutes.
Add rutabaga, stir and cook for 3 minutes.
Add yellow squash, stir cook for 2 minutes.
Add kale, stir and cook for 4 minutes.
Season with pepper to taste.
Add 1/4 Tsp butter, stir.

Transfer vegetables to plate.  Add remaining butter and red pepper flakes to skillet, just until butter is melted, stirring.  Pour over rice and serve!

Happy New Year!!! Basic Green Smoothie

Happy New Year!!!

I hope that you enjoyed a fitting farewell to 2014 and joyful welcome to 2015!  I've been enjoying the holidays with family, and haven't been as consistent with my semi-raw vegan practices (and obviously terrible at blogging), but starting this week, I'm back on it!  I've been having my breakfast smoothies, though.  So, I offer my recipe for a basic breakfast smoothie in this blog posting.  Of course, you can change the type of fruit and vegetable, but overall this is how I make my shakes.

First smoothie on my blog!

December 17, 2014

Breakfast: smoothie Almond/coconut milk, aloe juice, cactus water, local honey, wheatgrass, flax seed, chia seed, coconut oil, mint, parsley, avocado, ginger, turmeric, spinach, plum, grapes, lemon / cucumber / mango / orange / sweet potato wedges.#SemiRawVegan @SemiRawVegan #VTgrateful @BobsRedMill @Lassens @Amazing Grass @Lily of the Desert @Truenopal @LoveMySilk

This was enough for 3 smoothies, once I added about 2/3 cup of unsweetened green tea.  I needed the energy boost today!

No time for cataloging the specifics of the recipe today.  I should be able to create a base recipe by next week sometime.  But until then, you can use the photos to guide you! : >

Hello and welcome to my new #SemiRawVegan blog!

I was inspired to try a raw vegan diet in July 2014, after watching a video of 3 women in their 70s on the Steve Harvey Show.  I decided that it was worth taking better care of myself, and since I've always loved vegetables, I figured it would be easy.  And it is!  I immediately did some research on what I should put in my shakes, found a great blender, and started experimenting with recipes.  Once I got the knack, I started sharing my ideas with family and friends, even posting photos on my Pinterest and Instagram boards.

I started this blog because I was receiving so many testimonials from family and friends telling me how much weight they lost after trying my shake and soup recipes.  Given that I'm a full time musician, working on my album, and spending my days practicing 6-8 hours per day, I will make an attempt to catalog my recipes in a more organized way.  My grandmother, Mary Pulliam, was an intuitive cook.  I don't remember ever seeing her measure anything.  I'm just like her.  I use my intuition, my eye and my cooking experience to determine ingredients, quantities and seasonings.  Luckily, I'm generally spot on.  But of course, that method doesn't work for everyone!

I enjoy my meals, never feel deprived and feel fantastic...and that's only after a few months of making and consuming #SemiRawVegan meals.

My Semi Raw Vegan Mantra:
Raw Vegan for Breakfast and Dinner each day.
For lunch, I have whatever I crave.

Granted, after a lifetime of healthy food choices, my cravings are rarely "unhealthy", but still...I never experience deprivation at the end of the day.  And I'm never left feeling hungry.  When my 14 year old, 230 lb football player / wrestler nephew visited me, I fed him #SemiRawVegan meals.  And even HE wasn't hungry after meals.  Pretty impressive, non?

Backstory
I'm a professional musician, I have several degrees in classical piano, graduated from Oberlin and Stanford (with added study at UC Berkeley and Mills), I've toured the world with Stevie Wonder, was the keyboardist/singer on the new Arsenio Hall Show and am working on my first album.  I'm also an exuberant (if not professional) dancer, yogi, polyglot, programmer, aspiring polymath and all around proud NERD!

As a kid, I was a weirdo.  I loved brussels sprouts and spinach and broccoli.  I hated most meat.  I would literally cry if someone insisted that I eat beef roast.  My entire family thought I was crazy.  When I turned 13, my mother finally allowed me to make my own food choices.  That year, I stopped eating candy, fast food, junk food, soda, red meat, fried food and milk.  I never liked any of it (told you I was a weirdo).  Of course, that's in general.  Did I ever eat pizza again?  Of course.  Have I had fast food french fries?  Of course, but I can't remember the last time.  After all, those fries taste awful once you try fries that you toss in olive oil with fresh garlic, fresh ground black pepper, red pepper flakes, oregano/sage/thyme/rosemary and bake in a 375° oven until crisp...yummy!

By the time I became an adult, I had lost all cravings for junk food, and have never experienced the weight gain that goes along with the habit of consuming empty calories.  I enjoy being healthy, strong and fit.  Note I didn't say SKINNY.  I work hard to not be "skinny" in the unhealthy sense of the word.  Furthermore, weight loss has never been my goal.  Optimal health is and always has been my primary goal.  I'm a strong advocate for body acceptance and abhor body shaming, whether someone is big or small.  Love yourself, regardless of your size, and do all you can to reach optimal health.

I tried being a vegan in college, but rice cakes and peanut butter weren't exactly a balanced meal.  Now that I'm older, I did better research and came up with what seems to be a good knowledge base for making healthy meals that taste great.
